Just another Manic Monday . . . wish it was Sunday!


Evie and I enjoyed the day at home. I tried to unpack and get the house back together and she found things to keep her busy. We had a pretty good rhythm going. I put something away then she found two things to take out. We made a tiny bit of progress. Getting the house back together after a trip is always the worst part!I made two chicken pot pies and a pan of brownies during nap time. We delivered dinner to a friend with a new baby. Isn't he the cutest thing?



   We took some brownies to the new neighbors. They were not home but Evie noticed that there was a load of new toys in the yard. She stood in our yard pointing to go back across the street. It made her pretty mad that the kids were not available to play.

   Daddy came home and we ate chicken pot pie for dinner. It's been a busy day but it's time to go work on putting some things away while my little helper is asleep.

Southern Living Chicken Pot Pie:

1 (14 ½ oz) can chicken broth
1(2.64oz) package country gravy mix
3 cups finely chopped cooked chicken
1 (16oz) package frozen cut vegetable medley, thawed
½ t garlic powder
1 (15oz) package refrigerated piecrusts

1. Whisk together chicken broth and gravy mix in medium saucepan; cook over medium heat, whisking constantly until thickened. Remove from heat. Stir in chopped cooked chicken, vegetable medley, and garlic powder.

2. Place 1 piecrust in a 9-inch deep-dish pie plate; spoon in chicken mixture. Top with remaining piecrust, pinching edges to seal. Cut several small slits in crust. Bake at 400 for 35-40 minutes or until golden brown.
