Play at Chick fil A

Evie and I met another mommy and her two boys at Chick fil A for lunch. Evie loved the 2.5 year old and thought he was really cool. She ate her chicken strip, fruit and cheese like such a big girl. We let the kids play after lunch. It was Evie's first time playing there and she loved it. She ran around with all the big kids and had so much fun.

We had fun playing outside, reading books and dancing to our Kindermusik cd this afternoon. Evie loves the freedom of being able to run all over the yard. It's going to be a challenge to keep her away from the neighbor's yard. Evie wants over there so badly to see the dogs and does not understand that their invisible fence is keeping them from running over to knock her down.

Carl got home and I went to the eye doctor once again to try and get my contact lenses correct. Carl and Evie picked up the pinecones in the yard. They had a great time and I came home in time for Evie's dinner. I threw our dinner together while Carl bathed Evie and it smells so yummy. My SIL prepared this over Christmas and it is delicious. It's a stretch for me to get Carl to eat it but I love it. He mostly eats the chicken and rice. Lollie's tip is to sprinkle a lot of pepper on the chicken to give it some color. This would be a great dish to take to someone especially since it's so easy to throw together. Carl thought it looked better after it came out of the oven!
Sun Dried Tomato Chicken:
1 cup of rice, on bottom
chicken, as much as you want
1 small jar of marinated sundried tomatoes
1 small jar of marinated artichoke hearts
1/2 jar of capers
1 can of chicken broth
lemon juice and white wine if you have some open
Cover and cook at 375 for 35-40 minutes and 10 minutes uncovered, then take it out and let it sit covered for a few minutes! Light and delicious!

  1. I love sun-dried tomatoes and I love easy recipes even more! I'll have to give that one a try.
